Industry Experts Predict 2026: Neighborhood Bars and  Functional Beverages

75 industry experts at Imbibe predicted that accessibility and complexity would be key diverging trends in 2026. Neighborhood bars offering premium experiences at casual price points emerged as a top priority.

 

Robby Dow, owner of Bespoke in North Carolina, noted that, "While the premium cocktail bar or speakeasy will always have a place, more people want a casual, welcoming environment where they can still get an exceptional drink." Functional non-alcoholic beverages are also gaining momentum. Alicia Perry, Director of Bar Operations at CH Projects, highlighted adaptogens, nootropics, and magnesium-infused drinks: "A lot of people are still looking to 'catch a feel.' And these beverages align with the vibe they're seeking."


Additionally, Bar Leone's Lorenzo Antinori predicted a return to classics built on "quality ingredients rather than modernist techniques." Drinks consultant Kaitlyn Stewart echoed this, advocating simple serves showcasing "beautiful ingredients master distillers put time and love into."
