Among the trends were dark and dramatic fruits like blackcurrant, elderberry, and honeyberry. Modern tropicals like pink guava are also on the rise, along with acid-forward citrus. Other trends included layered botanicals, like sakura, rose, orange blossom, and, of course, swicy/savory options, which have been on the rise for some time.
The overarching shift: contrast beats simplicity. Brands are moving beyond single-note sweetness toward multidimensional flavor experiences combining depth, visual intensity, and balanced complexity.
